The Crockpot Chronicles

So I've decided to plan out monthly menus this school year. I used to make up a weekly menu but I've decided that a monthly menu would force me to limit the number of repeat maindishes that I serve (crockpot chicken anyone?) So, I started with only 2 weeks of meal planning to carry me through the rest of August and in September I will start with the 4 week routine. But honestly, my post is not about meal planning, but rather a small meal misshap that happened on Wednesday...

Tuesday night I came home from work, checked my menu and was reminded that I had planned on putting a roast, potatoes, and carrots in the crockpot for Wednesday's dinner. Being the plan ahead person that I am, I readied the meal and placed it in the fridge just prior to bedtime. That way, the next morning all I had to do was take the meal out of the fridge, place it in the crockpot shell, and turn it on...all very simple. As I'm sure you can surmise from the noteworthiness of this event, I completely forgot to take the meal out of the fridge, so John and I came home Wednesday and each ate a very delicious bowl of corn flakes. Very disappointing. Although the good news was Thursday night's dinner was already taken care of...

I'm trying to plan ahead meals more than a week ahead too... if I don't, I end up exhausted Sunday evening with no desire to grocery shop, so we end up eating cereal/ chili dogs/ a random chicken and rice casserole, etc. for a week straight.

I just don't think I'm creative enough to think up THAT MANY MEALS in one sitting... I can hardly think of what I want for dinner in the week ahead!!! :)

Yeah, I have that problem too. I'm trying to go through my cookbooks during my leisure time (although now that's school's started I don't have much of it) and pick out recipes that I would like to try. I enjoy challenging myself to be creative, so we'll see how it goes.

I have the "meal calendar" on the fridge. Scott makes fun of me, but it works as long as I don't get lazy. I have many things that I have made from the lovely RBC women's cookbook, but also another favorite site of mine that you probably already know is www.allrecipes.com
I have found many meals in a pinch when I didn't have time to run to the market.

I have also used www.allrecipes.com. I like to type in an ingredient that I have alot of and see what they come up with. It works for me.
