When life gives you lemons...

...make lemon bread. This lemon bread is to die for. Everytime I receive lemons I make this bread (and I've managed to receive quite a few lemons this winter :) I keep trying to make myself try something else with the little yellow gems, but this recipe is just too delicious to not make. Every. single. time. I. have. lemons. So, if you find yourself with a number of lemons of your own, do try. You will not be disappointed.

Lemon Bread:
1/2 cup margarine
1 cup sugar
2 eggs (slightly beaten)
1 1/4 cup flour
1 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1/2 c. finely chopped nuts (I leave these out)
1/4 cup sugar
juice of one lemon
grated peel--1 lemon

Cream margarine with sugar. Mix in eggs. Sift flour with baking powder and salt. Add alternately flour mix and milk to margarin. Mix well, then add nuts and lemon peel. mix again and bake in sprayed 5 x 9 loaf pan or 3 mini loaves in moderate oven 350 degrees for 1 hour. Mini loaves 35 minutes or until toothpick comes out clean.
Combine 1/4 cup sugar with lemon juice and pour over top of loaf when it comes out of the oven. Happy eating!

The recipe comes from my brother-in-law's great-grandmother, Bertha. I have her cookbook "Bertha's Best" and it's quickly becoming one of my favorites.

This sounds delicious. Too bad Phil doesn't like anything with lemons in it.

This looks great! I do have an abundance of lemons right now, so making this bread is definitely on my to-do list this week.
